should a improper fraction always be changed into a a mixed fraction for the end result?
for example 7/8 + 5/6 = 41/24 can I keep that answer as the final answer or should they always be changed to mixed fraction for the end answer which would be 1 and 17/24.

It depends on what the question is. If it only wants you to add the fractions, then saying 41/24 is perfectly acceptable, and easier to work with too if you have to use that in another calculation.
You only need to put it into mixed form if the question specifically asks you to, otherwise it's fine to leave it. It's also fine to do that if you're not asked though, so feel free to convert it anyway if you want extra practice or anything.
