Before you get to the enzymes the first and major constituent is good old fashioned HCl.

I agree with you regarding the satisfaction and importance of actually computing some numbers. I can't tell you how often I see time and money wasted because someone didn't bother to run the numbers.

My Science Book wrote:

Pepsin is a major enzyme of gastric juice which functions in acidic medium. It hydrolises proteins into soluble fragments called proteoses and peptones.

The enzyme gastric lipase partially breaks down fat into its components.

Renin (active only in infants) curdles the milk by converting soluble milk protein casein into insoluble protein called paracasein.

Pancreatic Juice consists of Trypsin, Amylase and Lipase.
Trypsin breaks down proteins, preteoses and peptones to form peptides.
Pancreatic lipase acts on emulsified acts on emulsified fat to form fatty acids and glycerol.
Pancreatic Amylase acts on starch, glycogen, dextrins and other complex carbohydrates to form maltose and similar other sugars.

Other important things which are not enzymes include Hydrochloric Acid, Insulin, Glucagon, Saliva.

There  is an enzyme in saliva called ptyalin.

Yes, ptyalin is what gives you that sweet taste when you chew on strach.
