Re: CarrotsCarrots are a great challenge because they almost seem to be a form of wood pulp, but they are very healthy, not only because of vitamin A, but also because they have a lot of pectin and fiber, which moderates cholesterol. A young person might scoff on cholesterol, pectin, and fiber. I used to make fun of older people concerned with eating prunes and all that stuff.
