Can you explain more about this topic? How do you know the gender of the new animal?

Animals is a huge category. I know about bees and mammals only.

If a bee is born of an unfertilised egg, it is male. If the egg had been fertilised before, the offspring is a female.

Mammals (at least humans) have a pair of chromosomes known as gender chromosome.
Male Configuration -> XY
Female Configuration -> XX
Now, since the female has both X's, the female gamete always carries 1 X
The probability that a randomly chosen male gamete carries a Y or an X is half. That is it can contain either an X or a Y.
If the male gamete which fertilises the female gamete is an Y, the offspring is an XY {X from mother and Y from father} and thus is a male.
If the male gamete is an X, the offspring is female (XX)

Other kinds of mammals have different mechanisms, I don't know

They are [removed]. Through some sort of genetic manipualtion they now give birth in a way more like mammals.

There are many other systems of species gender determination.

In one, the heterogametes (ZW) are female. In another,  males have a haploid and the females a diploid number of chromosomes. In a third one, one gender has only one gonosome, while the other has two!
