I learned mine from the Beiler and Sierpinski books. There are collections of IMO problems in number theory in Andreescu's books.

Recreations in the Theory of Numbers by Albert H. Beiler

Elementary theory of numbers by Wacław Sierpiński

Mathematical Olympiad Treasures  by Titu Andreescu

104 Number Theory Problems by Titu Andreescu

Number Theory: Structures, Examples, and Problems by Titu Andreescu

Those are the ones I have looked at.
